A midi controller sends only midi information on note start stop, channels, pitch bends, program change etc etc. Nothing to do with polyphony.
You can connect this midi information to as many midi instruments, VST etc.
(Controller midi out to instrument 1 midi in, Instrument 1 midi through to instrument 2 midi in etc)
Your controller will trigger notes to all instruments in the same midi channel.
Each of your instrument that is being played has a polyphony limit.
Example, Assume you connect this midi controller to two devices of which each has a polyphony voice limit of 24.
Both of Your instruments, you selected a patch that has 2 different sounds played together, say a piano and a strings.
Each instrument can play 12 midi notes from your midi keyboard at the same time.
For instrument 1, you can have 12 polyphony sounds for piano and and 12 for strings
For instrument 2, you can have 12 polyphony sounds for piano and and 12 for strings.
In all, if you press 12 midi notes at the same time, you get a total of 48 polyphony.
If you exceed, say you pressed more, the instruments still play only those same number of 12+12+12+12 notes but with the earlier triggered notes cut off.
