Double-check the setting of aftertouch in the Utility menu - option 6.When using my DX 11 synth as a midi controller I can use the pitch and the mod wheels, but the aftertouch doesn't transmit.
Get a midi message monitor (such as MidiOx) to view what is actually transmitted.
And where are you sending it to? Not all synths have aftertouch implemented.
Also there is channel aftertouch (one value for the whole channel) and polyphonic aftertouch (a value per note.) From the owner's manual I understand that it has implemented only channel aftertouch. If the receiving synth expects polyphonic aftertouch, then there's the issue.
According to the MIDI implementation chart at the end of the manual, the data of these sliders is transmitted as CC numbers 6 and 7. Then it is up to the receiving end to do something with it. You may need to convert it to another controller number in order to do something useful with it.Also, is there any way I can use the data entry or the volume controls as midi controllers?

That's the regular note velocity. Aftertouch is something different.Many synths of that era did not have after touch and often played with fixed velocity of 110
